Hello and Welcome to Kale, Quinoa & Cookies!

It finally happened. I made the leap and launched a website. Albeit, it was a very slow, confusing and somewhat doubt-filled leap, but I’ve made it all the same!

This site is a project I’ve had on my mind for the last six months or so. I launched Kale, Quinoa & Cookies on social media back in 2016 (if you’ve been following along with me on Instagram, Facebook, or Twitter, thank you!), but more recently I feel I’ve had more to say than I can express on those platforms. So, here we are!

So…why the name Kale, Quinoa & Cookies? Back when I started my online presence, kale and quinoa were kind of at the height of their “superfood” glory. They were all the rage. It seemed like every food company was trying to find a way to pack these foods into their products, and everyone and their mom was looking up recipes that included one or both. As a dietitian who does not believe that foods can be “super” healthy (although they can be super delicious), looking back, I think I chose the name for somewhat sarcastic reasons, if I’m being honest. What can I say, sarcasm is part of my sense of humor! Another reason was that I wanted to have a platform that promoted the idea that all foods fit! From kale and quinoa to cookies - all foods fit! The Kale, Quinoa & Cookies blog will serve a dual purpose:

#1: It will be the home for my recipe creations. I love getting inspired in the kitchen! Whether cooking curry or baking pies, preparing delicious and nourishing dishes is always time well-spent in my book. I was fortunate to grow up in a home where my parents cooked often and involved us kids increasingly as we got older. I realize I owe a lot of my interest in food in general to my upbringing…so thanks mom and dad for hauling me along to the grocery store every week and making me the official chocolate chip cookie baker and guacamole maker of our house!

You’ll find a variety of recipes on this website, from veggie-filled salads to slow cooker favorites to decadent baked goodies! I cook mostly with what I consider pretty standard ingredients; things you won’t have to go to a specialty store to buy, but I also like trying out new foods, so you’ll witness some new food discoveries too. I promise to make my recipes as accessible and uncomplicated as possible, in the hopes that that means you might actually make them in your own kitchen!

#2: It will be a place to share my thoughts, journey, and discoveries in wellness. Health is so much more than food and exercise. I am trained as a dietitian, and wholeheartedly believe that nutrition is important to live a happy and productive life. However, I feel that in our current “health”-obsessed culture, we are really missing the mark on what it means to have a healthful diet, and a good relationship with food. The nutrition messages that we hear today are very polarizing. A food, food group, or ingredient (i.e. sugar, gluten) is portrayed as either the culprit or savior of our health woes and this all-or-nothing thinking erodes our relationship with food. Of course everyone has to eat, so food is very central to everyone’s daily life, and the question of what to eat – “too many calories?”, “too much sugar!”, “is it organic?”, “too many carbs!”, can causes anxiety and eats (pardon the pun) up time and energy.

I hope to empower readers to challenge the thoughts, behaviors and cultural norms that have contributed food fears, a poor relationship with food, or negative body image. I recognize that I have been very lucky to have escaped these things for the most part, and have come into adulthood relatively unscathed, but as a female and feminist, I know this is a societal issue, which is why I am passionate about supporting others in their wellbeing, while I continue to work on my own. I only hope that my insights will help in some way.

    I was curious if you ever thought of changing the layout of your website? Its very well written; I love what youve got to say. But maybe you could a little more in the way of content so people could connect with it better. Youve got an awful lot of text for only having one or 2 images. Maybe you could space it out better?
